Tapsilog is a popular Filipino dish that consists of three main components: Tapa (marinated and cured beef), Sinangag (garlic fried rice), and Itlog (fried egg). In this recipe, we will wrap the tapsilog into a burrito.

Ingredients:
For the Tapa (Marinated Beef):
500g thinly sliced beef sirloin or flank steak
4 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon brown sugar
1 teaspoon black pepper
1 tablespoon vinegar (preferably cane vinegar) or Calamansi Juice
2 tablespoons cooking oil (for frying)
For the Sinangag (Garlic Fried Rice):
4 cups cooked jasmine rice (preferably day-old)
4 cloves garlic, minced
2 tablespoons cooking oil
Salt and pepper to taste
For the Burrito Assembly:
Large flour tortillas
Cooked Sinangag (Garlic Fried Rice)
Shredded lettuce
Diced tomatoes
Corn Kernels
Shredded cheddar cheese
Sour cream (optional)
Salsa or pico de gallo
Guacamole
Fresh cilantro
Cooked black beens
Instructions:
1. Marinate the Tapa:
In a bowl, combine minced garlic, soy sauce, oyster sauce, brown sugar, black pepper, and vinegar. Mix well.
Add the thinly sliced beef to the marinade, ensuring that each slice is well-coated.
Marinate the beef in the refrigerator for at least 2 hours or overnight for best results.
2. Cook the Tapa:
Heat cooking oil in a pan over medium heat.
Cook the marinated beef slices until browned and caramelized, about 3-5 minutes per side.
Set aside.
3. Prepare the Sinangag (Garlic Fried Rice):
In the same pan, add more oil if needed.
Sauté minced garlic until golden brown.
Add the day-old cooked rice to the pan, breaking up any clumps.
Season with salt and pepper to taste. Cook until the rice is heated through and slightly crispy.
4. Fry the Itlog (Fried Egg):
In another pan, heat cooking oil over medium heat.
Fry eggs sunny-side-up or according to your preference. Season with salt and pepper.
5. Assemble the Burritopsilog:
Warm the flour tortillas in a dry skillet or microwave for about 15 seconds to make them pliable.
In the center of each tortilla, layer Sinangag rice, the tapa and bean mixture, shredded lettuce, diced tomatoes, and shredded cheddar cheese.
Add sour cream, salsa or pico de gallo, and chopped fresh cilantro.
6. Fold and serve the Burritopsilog:
Fold the sides of the tortilla in towards the center and then roll it up tightly from the bottom to create a burrito.
Optional: Heat the assembled burritos in a skillet for a minute on each side to make them crispy and warm.
