Embutido is a Filipino-style meatloaf that's often served during special occasions.
Embutido mixture
Ingredients:
1/4 kg ground pork
1/2 cup breadcrumbs
2 eggs, beaten
1/4 cup grated carrots
1/4 cup minced red bell pepper
1/4 cup minced green bell pepper
1/4 cup sweet pickle relish
1/4 cup raisins
1/4 cup grated cheese
1/4 cup chopped sweet ham
1 small onion, finely chopped
1 cloves garlic, minced
1/4 cup soy sauce
Salt and pepper to taste
Cordon Bleu
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Vegetable oil for frying
Sauce (optional)
6 tbsp butter
1 tbsp all-purpose flour
1/2 cup chicken broth
1 tsp chicken bouillon granules
1 cup heavy whipping cream
Black pepper & salt
Nutmeg
Basil (garnish) or parsley

Instructions:
In a large mixing bowl, combine the ground pork, breadcrumbs, beaten eggs, carrots, red bell pepper, green bell pepper, sweet pickle relish, raisins, cheese, chopped ham, onion, and garlic. Mix well.
Add soy sauce, salt, and pepper to taste. Mix thoroughly until all ingredients are well combined.
Preheat your oven to 375°F (190°C).
Place each chicken breast between two sheets of plastic wrap and use a meat mallet to pound them to an even thickness, about 1/4 inch.
Season both sides of the chicken breasts with salt and pepper.
Spread the embutido mixture on the chicken.
Roll up the chicken breasts, ensuring that the ham and cheese are enclosed. Secure the rolls with toothpicks.
In three separate shallow bowls, set up a breading station. Place flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs and grated Parmesan cheese in the third.
Roll each chicken roll in the flour, dip it in the beaten eggs, and then coat it with the breadcrumb mixture, ensuring an even coating.
Heat vegetable oil in a large skillet over medium-high heat. Brown the chicken rolls on all sides until the breadcrumb coating is golden brown.
Transfer the browned chicken rolls to a baking dish and bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through.
Remove the toothpicks before serving.
Optionally, you can make a simple sauce to drizzle over the Chicken Cordon Bleutido when serving.
