Embutido is a Filipino-style meatloaf that's often served during special occasions.
Embutido mixture
Ingredients:
1/4 kg ground pork
1/2 cup breadcrumbs
2 eggs, beaten
1/4 cup grated carrots
1/4 cup minced red bell pepper
1/4 cup minced green bell pepper
1/4 cup sweet pickle relish
1/4 cup raisins
1/4 cup grated cheese
1/4 cup chopped sweet ham
1 small onion, finely chopped
1 cloves garlic, minced
1/4 cup soy sauce
Salt and pepper to taste
Banana Ketchup
For the Burrito Assembly:
Large flour tortillas
Shredded lettuce
Diced tomatoes
Corn Kernels
Shredded cheddar cheese
Sour cream (optional)
Salsa or pico de gallo
Guacamole
Fresh cilantro
Cooked black beens
Instructions:
In a large mixing bowl, combine the ground pork, breadcrumbs, beaten eggs, carrots, red bell pepper, green bell pepper, sweet pickle relish, raisins, cheese, chopped ham, onion, and garlic. Mix well.
Add soy sauce, salt, and pepper to taste. Mix thoroughly until all ingredients are well combined.
Steam the embutido rolls for about 45 minutes to 1 hour or until the meat is cooked through. Make sure to check the water level in the steamer, adding more as needed.
Once cooked, remove the embutido from the steamer and let it cool.
Once cooled, unwrap the embutido from the foil and brush the outside with Banana Ketchup.
Heat oil in a pan and lightly fry the embutido until the outside is browned and has a crispy texture.

Fold and serve the Emburrito:
Optional: Heat the assembled burritos in a skillet for a minute on each side to make them crispy and warm.
