Dinuguanghetti (Dinuguan Sphagetti)

Dinuguan, also known as "blood stew" or "chocolate meat," is a Filipino savory dish made from pork offal and/or meat simmered in a rich, spicy blood-based gravy. Here's a basic recipe for making dinuguan:


INGREDIENTS


  • 1 kg pork belly, cut into cubes

  • 1/2 kg pork offal (such as liver, heart, and kidneys), cleaned and diced

  • 2 cups pork blood

  • 2 cups vinegar

  • 1 onion, finely chopped

  • 4 cloves garlic, minced

  • 2 bay leaves

  • 2 tablespoons oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 3-4 pieces green chili peppers (siling haba)

  • 1 tablespoon fish sauce (patis) or salt to taste


Quick pasta cooking:

  • 8 ounces (about 225 grams) of your preferred pasta (spaghetti, penne, fettuccine, etc.)

  • Water for boiling

  • Salt, to taste

1.Boil Water:

  • Fill a pot with salted water and bring it to a boil.

2. Add Pasta:

  • Drop pasta into boiling water and cook to al dente, stirring occasionally.

3. Check Doneness:

  • Taste a piece a minute before suggested time; it should be firm but cooked (Al dente).

  • Some people prefer to rinse the pasta under cold water to stop the cooking process and cool it down, especially if you're making a cold pasta salad. However, for hot dishes, skipping this step is common.



INSTRUCTIONS


1.Prepare the Pork:

  • In a pot, boil the pork belly and offal in water until tender. Drain and set aside.

2. Make the Dinuguan Sauce:

  • In a separate pot, sauté garlic and onions in oil until aromatic.

  • Add the boiled pork belly and offal. Cook until slightly browned.

  • Pour in vinegar and let it simmer for about 2-3 minutes to reduce the acidity.

  • Add pork blood and stir continuously to prevent clotting. Allow it to simmer for about 5-7 minutes.

3. Season the Dish:

  • Season with salt, pepper, and fish sauce (patis). Adjust the seasoning according to your taste.

4. Serve:

  • Once the dinuguan has reached your desired thickness and flavor, remove it from heat.

  • Toss the pasta with the dinuguan.  Serve immediately and enjoy!


Note: Some variations of dinuguan may include coconut milk for a creamier texture, and others might include additional spices or ingredients. Adjust the recipe based on your preferences.
